Tofu "Pancakes"

Makes: 1-2 Servings

Ingredients:

1 Cup Tofu
3 Tablespoons Whole Wheat Flour
2 Tablespoons Rice/Soy Milk
1/2 Tablespoon Vanilla
3/4 Tablespoon Baking Powder
3 Tablespoons Maple Syrup

Directions:

1) Crush Tofu in a bowl & mix with other dry ingredients.
2) Add wet ingredients & stir.
3) Spread batter on cookie sheet & cook at 375 for 25 minutes.
4) Add topping of your choice.
